Initial mix
Initial mix is where ingredients become dough. Hydration, flour behaviour, salt, inclusions, and early handling decisions begin shaping the final loaf.
Fermentation through proof
Bulk fermentation, dividing, shaping, and proofing are treated as connected stages. Each stage changes dough strength, gas retention, flavour, and readiness for the bake.
